Amatriciana sauce (Sugo all’amatriciana) 370ml – serves four
Amatriciana, Napoletana and Arrabbiata are the three great tomato sauces of Italian cooking. We are going to do all three at various stages throughout the year. First out of the blocks is Amatriciana which pairs the tomato with diced pancetta, a flavour marriage arranged in heaven.
A little tip: Warm through and dress on freshly cooked pasta with a little good olive oil, and grated parmesan.
PAIRS WITH: MANCINI PENNE PASTA AND MANCINI PACCHERI PASTA
Ingredients: Unsmoked pancetta (11%) (pork, water, salt, sodium nitrate, sodium nitrite, potassium nitrate), olive oil, onion, garlic, tomato , chilli flakes, black pepper, parsley, bay leaf, salt
Allergens: See ingredients in bold. Produced in a kitchen which handles milk, gluten, sesame, celery, lupin, nuts, eggs, soya, fish, mustard, peanuts, sulphites.
Storage: Keep in the fridge and eat within use by date on lid. Once opened consume within 2 days.
Cooking: Heat slowly in a saucepan until bubbling gently.
One pot of amatriciana sauce serves four people.
